This is an old recipe of my Nanna's. It is great for using up lots of apricots.
Ingredients
- 500 g apricots fresh ripe
- 375 g white sugar
- 2 tbs gelatine powder
- 1/2 cup coconut flakes
Method

Step 1Place apricots, sugar and gelatine in a saucepan and bring to the boil.

Step 2Pour into a slice tray, allow to cool and refrigerate.

Step 3When set, cut into squares and roll in coconut.
Recipe Notes
This freezes well so a large batch can be made when the fruit is in season.
