This is an old recipe of my Nanna's. It is great for using up lots of apricots. - Melissa

Ingredients

  • 500 g apricots fresh ripe
  • 375 g white sugar
  • 2 tbs gelatine powder
  • 1/2 cup coconut flakes

Method

  • Step 1
    Place apricots, sugar and gelatine in a saucepan and bring to the boil.
  • Step 2
    Pour into a slice tray, allow to cool and refrigerate.
  • Step 3
    When set, cut into squares and roll in coconut.
Recipe Notes
This freezes well so a large batch can be made when the fruit is in season.
