Making your own mayonnaise might sound scary, but as long as you add your ingredients slowly so you don’t split the mix, it’s actually really easy! You can even make the recipe below by hand, using a large whisk – but be warned, you’ll need strong arms to mix until it’s finished.
Which oil should you use to make mayonnaise?
Choose a mild olive oil or grapeseed oil that won’t overpower the mayonnaise and give it a grassy flavour.
Basic mayonnaise
- 2 egg yolks
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 1½ cups of oil (grapeseed or mild olive oil)
- Salt
Step 1
Place yolks, mustard, lemon juice and a pinch of salt in a food processor and process until well combined and slightly thickened.
Step 2
Place oil in a jug and, with the processor motor running, very slowly add the oil in a thin, steady stream. Don’t rush this step or you risk splitting the mix. Scrape down the bowl with a spatula, blitz again, then taste and adjust seasoning.
Step 3
Place mayonnaise in a small, airtight container with a layer of plastic wrap on the surface to prevent a skin from forming. Securely cover and store in the fridge for up to a week.
Eggless mayonnaise
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 cup evaporated milk
- 1/4 teaspoon pepper
- 1 teaspoon mustard powder
- 3 tablespoons white vinegar
- 1 cup canola oil
Step 1
Place dry ingredients into the blender bowl. Add milk, blend until mixed.
Step 2
Add vinegar slowly. Add oil a little at a time, ensuring it is blended in before adding more. If mix is too thick, add more evaporated milk, blending well. Store in the fridge.

Garlic mayonnaise
Add a clove of finely chopped garlic to step one for this creamy Spanish inspired mayonnaise. Use with anything from roast veggies to a toasty sandwich.
Herb mayonnaise
Stir a tablespoon of fresh chopped herbs through the finished mayonnaise. Choose basil, dill, parsley or any other choice of herb.
Chilli mayonnaise
Substitute a tablespoon of olive oil for a tablespoon of chilli oil to create a spicy mayonnaise that is ideal to serve with wedges or chicken skewers.
Lemon mayonnaise
This lemon mayonnaise tastes fantastic with fish and seafood.
Mango mayonnaise
A mango mayonnaise takes on a nice tangy twist that pairs great with fish and seafood as well as avocados.
Curry mayonnaise
