Congratulations to our Home Cook Hero winner Kim (LandofZonkt) with her recipe for Broccolini and Mushroom Salad! She has won $1,000 and her recipe will be published in an upcoming issue of Super Food Ideas magazine.

What we love about Kim's simple salad is the bright colours, Asian-inspired dressing and versatility. We think this salad will be ideal with so many proteins like grilled steak, steamed fish, poached chicken or marinated tofu. Kim suggests serving this salad warm, but our judges also enjoyed the salad cold making it ideal to take to a barbecue or picnic. You can make the dressing in a small screw-top jar then pour over the salad dressing before serving. 

Kim said she was inspired to create this simple salad by "The seasonal produce at the time and my Dad. We are both big mushie fans and I made this for lunch one day, he loved it so much he wanted me to make it the next day too".

The judges other favourite recipes were: 

  • Brussel Sprouts with Roasted Pine Nuts and Almond Flakes by Veggie_Art – Lightly pan-fried with a hint of nutmeg and caraway seeds, this recipe converted one of our judges into liking Brussel sprouts. 
  • Fried Florets by Seryem – Cauliflowers are given a makeover with this simple pan-fried dish. Garlic-lovers won’t be able to resist the creamy yoghurt sauce. 
  • Smash Pie by Judi55 – Mashed potato is baked into a creamy side with hints of rosemary and garlic. An ideal side to serve with sausages, roast dinner or slow-cooked favourites.
